We have an exciting opportunity for someone to lead our current and expanding Café team as we move into our new premises in central Whitstable. Our beloved café was forced to move locations but with huge community support we have been able to secure a central location and we are starting from scratch so we can put the very much-loved Revival stamp on everything we do, and you have the opportunity to be part of shaping the future of this popular not-for-profit.

We are looking for an inspiring Manager to take it forward and create a dynamic and unique space combining food, community, wellbeing and a funky unique mid-century vibe. You will deliver a high-quality menu, the Café is based on casual dining with a street food and small plates vegetarian and vegan menu, the service is fast and professional with a mix of eat-in and takeaway.

Revival is the Mind in Bexley and East Kent not-for-profit Social Enterprise; we provide a community café and space for wellbeing and mental health information, initiatives and support. The café is at the heart of our provision and the main trading arm, our food and service are key to our success.

As Manager of Revival, you will work closely with the Revival Executive Director on all aspects of the business to manage the multi-use community space, balancing the mental health and wellbeing initiatives with the needs of the café and the community, to include the Revival Retreat and staffing across all elements of the organisation. You will have ultimate responsibility for ensuring the trading elements (Café and Revival Retreat) operate efficiently and profitably while maintaining its good reputation and ethos.

Responsibilities include (but are not limited to) maintaining the cafe’s revenue, profitability and quality goals, ensuring efficient operation and service, as well as maintaining high production, productivity, quality, and customer-service standards. You will deliver a high-quality menu and motivate our staff to provide excellent customer service whilst balancing the needs of our project work.

The position is open to candidates with a combination of qualifications, practical experience, strong interpersonal skills and an understanding of business. To be successful in this role, you’ll need management skills and experience in both front and back of the house.

We’ll expect you to lead by example and uplift our staff during busy moments in our fast-paced environment. Ultimately, you will ensure our café and events run smoothly, profitably, and customers have a positive dining experience and will want to come back and recommend us to their friends and family.

Knowledge and Experience:

  • Proven two years continuous experience as a Restaurant/Café Manager, Restaurant/Café General Manager, Hospitality Manager or similar role
  • Strong leadership, motivational and people skills with proven customer service experience as a manager
  • Extensive food and beverage knowledge, with a keen interest in food and drink trends and an ability to utilise social media to increase engagement and sales
  • Experience and confidence with café management software and POS systems, to include staff rotas, financial reporting and planning, and knowledge to train other staff in the requirements of their role.
  • Good commercial and business awareness for achieving successful performance and acute financial management skills
  • A full awareness of hygiene, and health and safety regulations and knowledge and experience enough to support and train other staff

  • Cooperation and teamworking skills, with an ability to work under pressure with a small team with the desire to lead, motivate, teach and support progression

  • BSc degree in Business Administration; hospitality management or culinary schooling is a plus

Schedule:

Working hours are typically 45 hours per week during busy periods. This will include evenings for events/groups and at least two weekends a month and public holidays.

All staff at Revival are part of the wellbeing support offered, mental health training will be provided, and staff will be given the opportunity to undertake workshops, peer support and mentoring or other related activities and will be expected to support other wellbeing initiative undertaken.

We are looking for an inspiring Lead Chef to take it forward and create a dynamic and unique space combining food, community, wellbeing and a funky unique mid-century vibe.

Menu development and delivery:

You must love cooking and baking from scratch and have a passion for vegetarian and vegan food, experimenting with and producing excellent unique dishes that will be part of a high-quality menu. The Café is casual dining based on international vegetarian/vegan street food and small plates. You will need to ensure our menu reflects the delicious and eclectic veggie options available across the world and be able to plan versatile weekly small plates menus and specials, working with seasonal ingredients and the more random ingredients that arrive from our FareShare partners, you will also need to adapt to food trends and local demand. The service is fast and professional with a mix of eat-in and takeaway. We also run a very successful pay-it-forward scheme to ensure our menu and service is inclusive for all.

Leadership:

You will lead a busy kitchen, working with our established chef who is diversifying his role and will no longer be leading the kitchen, you are responsible for all Kitchen staff and must ensure effective training, competence and supervision, directing staff where needed and ensuring they support the café as a whole during busy times and clear down. This is particularly so for cafe assistants who work across kitchen and front of house duties so you will need to liaise with Front of House and the Cafe Manager to ensure smooth service provision. You will need to ensure FOH are up to date throughout the shift with specials, menu changes, when dishes are running low, allergens and any other service level requirements.

You may be required to take food to tables during Front of House busy times and you will need to be adaptable to the needs of the business to ensure successful service. Revival is a very friendly and supportive workplace, the leadership team requires a calm, adaptable manner, all staff members are to be valued and respected, kindness is very much key to the Revival ethos.

Knowledge and Training:

The practical application of your chef qualifications and cooking experience will be necessary on a daily basis. You will be required to use this training to run a safe and compliant kitchen at all times.

As Lead Chef you will work with other members of the Kitchen team (Kitchen Assistants, Porters, volunteers or students/trainees, work experience) collaborating and ensuring policy and procedure is adhered to. You will work with the Manager to devise a programme of basic skills training for the kitchen staff, and you will be responsible for the training of kitchen porters and assistants. There are specific requirements for working with, training and supporting apprentices, work placements and volunteers, this will involve liaising with service providers and keeping records and reports, you will need to be computer literate in order to facilitate this.

You will be required to follow strict HACCP requirements and maintain all up to date Health and Safety and Food safety certificates and be knowledgeable about the roles and responsibilities in these areas and train and monitor all staff to ensure compliance at all times.

All Revival staff will undertake basic Mental Health training as part of their role and you may be called upon in service to support FOH team members with customers where you will need to utilise your knowledge and skills and show empathy and understanding. In the absence of a Manager on site, you will be the most senior member of the team.

Events:

Revival holds regular community and fundraising events often with set menus and themes, and you will be expected to devise dishes and support other staff in preparing and presenting before and during events. You will be expected to work with the Manager and other kitchen staff to plan a schedule of events throughout the year. These must be costed and planned to ensure a good G.P.

You will also be required to facilitate group bookings, private bookings and children’s parties with menu development and delivery. This includes catering for the Revival Retreat.

Ordering and Stock:

You will be responsible for the planning and ordering of kitchen stock both on a daily basis for fresh goods and weekly for dried/store cupboard goods. You will liaise with local and national suppliers and partners and sourcing appropriate ingredients.

You will be responsible for, and must work with other kitchen staff to ensure effective stock rotation and organisation. You must ensure regular date checking of fridges and storage cupboards, you will be responsible if any goods are found to be out of date or any other violation occurs even when you are not on shift so you must ensure that procedures are in place in your absence and all staff on shift are trained and aware of their responsibilities.

You will be responsible for maintaining and producing a good G.P and kitchen costings for all menu items and liaising with the Manager to adapt menus to reflect sales to ensure the menu is responsive to demand and costed to ensure solid financial performance.

Daily Kitchen policies and procedures:

You will be responsible for developing opening and closing procedures to ensure all areas are free from contamination, are clean and ready for service.

You will keep a record of wastage and work out strategies to keep this to a minimum. You will maintain kitchen records including prep lists, order sheets and fridge/freezer temperature record sheets. You will be responsible for updating the H&S and Food Hygiene folders and ensure they are accessible for any EHO visit.

You will ensure that all kitchen equipment is used correctly and maintained correctly and liaise with the Manager to ensure that service agreements are established and records of dates or visits and works carried out are maintained.
You will work with the Manager to produce rotas for the kitchen to ensure appropriate staff levels for service.

Schedule:

  • Shift patterns will vary in accordance with the needs of the business 4–10-hour shifts
  • Day shifts with some evening shifts for events, groups or private bookings
  • Monday to Sunday (At least two weekend shifts a month)

You will also be required to cover holidays and sickness or in the event another kitchen staff member is unavoidably prevented from attending a shift.

Mental health and wellbeing:

You will need to show understanding and commitment to the ethos behind Revival and to fully support the charity aspect of the business and the various schemes we run. All staff at Revival are part of the wellbeing support offered, mental health training will be provided, and staff will be given the opportunity to undertake workshops, peer support and mentoring or other related activities and will be expected to support all other wellbeing initiative undertaken.

Qualifications and Experience:

Should include:

  • City & Guilds 706/1 | 706/2 Catering
  • NVQ Level 3
  • Level 1,2 and 3 Food Safety Awards
  • Level 2 Health and Safety in the Workplace Award
  • Minimum 2 years relevant experience
  • Awareness of manual handling techniques
  • Awareness of Control of Substances Hazardous to Health Regulations (COSHH) and chemical safety
  • Competent level of English spoken and written

The cafe is currently in it re-building phase, it is not due to open until sometime in June, exact date to be confirmed, there may be a short period where you will be involved in the setting up of the kitchen rather than direct service, this will provide an opportunity for you to organise the kitchen as per the teams requirements and be part of developing the new Revival.
